Ingredients
  

Main Ingredients
  • 2 pieces Chicken breast Seasoned with salt and pepper
  • 2 cups Sweet potatoes Diced
  • 1 cup Rice Brown or white
  • 2 tablespoons Olive oil For roasting sweet potatoes
  • to taste Salt
  • to taste Pepper
  • 2 cups Your favorite vegetables e.g., broccoli, bell peppers, carrots
  • 1/4 cup Dressing e.g., vinaigrette or tahini

Method
 

Preparation and Roasting
  1. Preheat oven to 400°F (200°C).
  2. Dice sweet potatoes and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25-30 minutes until tender.
  3. While sweet potatoes are roasting, cook rice according to package instructions.
  4. In a pan, cook chicken breast until fully cooked and no longer pink in the center. Season with salt and pepper.
  5. Slice the cooked chicken.
Assembly and Serving
  1. In bowls, layer rice, roasted sweet potatoes, sliced chicken, and your choice of veggies.
  2. Drizzle with dressing and serve.

Notes

Leftovers keep well in the fridge for about 3-4 days. For meal prep, assemble everything except the dressing to create a quick grab-and-go meal.
