  • 1 cup whole wheat flour
  • 1/4 cup coconut sugar Can increase for sweetness
  • 1 tsp baking powder
  • 1/2 tsp cinnamon Plus additional for sprinkling
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk Homemade almond milk enhances taste
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
Topping
  • to taste additional cinnamon and sugar For sprinkling after baking

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the whole wheat flour, coconut sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix the applesauce, almond milk, melted coconut oil, and vanilla extract until well blended.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Scoop the batter using a small cookie scoop and place on the prepared baking sheet.
Baking
  1. Bake for 10-12 minutes or until golden brown.
  2. Once cooled, sprinkle with the additional cinnamon and sugar before serving.

Notes

These churro bites are best served warm. They pair wonderfully with hot chocolate or coffee. Store leftovers in an airtight container for up to 5 days; microwave for a few seconds to warm them up again.
