Preparation
- Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking pan.
- In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt to form a crumbly dough.
- Press half of the dough mixture into the bottom of the prepared pan to form the crust.
- In another bowl, mix the diced apples with cinnamon and lemon juice. Spread the apple mixture evenly over the crust.
- Crumble the remaining dough mixture over the apple filling.
Baking
- Bake in the preheated oven for about 25-30 minutes or until the topping is lightly golden.
- Allow to cool before slicing into bars and serving.
Notes
These bars can be topped with maple syrup, additional cinnamon, or served with yogurt or whipped cream. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
