Ingredients
  

Pasta and Vegetables
  • 1 Lb Halloween Pasta
  • 1/2 Cup Red Onion (finely chopped)
  • 3/4 Cup Rainbow Carrots (sliced into rounds)
  • 1 Cup Spinach (chopped)
Dressing
  • 1/4 Cup Extra Virgin Olive Oil
  • 2 Tbs Red Wine Vinegar
  • 1 Tsp Brown Mustard
  • 1/2 Tsp Maple Syrup
  • 1/4 Tsp Dried Sage
  • 1/4 Tsp Dried Oregano
  • 1/4 Tsp Dried Thyme
  • Salt + Pepper (to taste)

Method
 

Preparation
  1. Cook your pasta in salted water until it’s al dente, then drain and set aside.
  2. Chop the red onion, slice the rainbow carrots, and chop the spinach.
  3. In a bowl, mix the dressing ingredients together and whisk until well combined, adjusting salt as needed.
  4. In a large bowl, toss together the pasta, chopped vegetables, and dressing.
  5. Serve and enjoy!

Notes

For serving, use a spooky bowl and consider adding gummy worms or candy eyes for a festive touch. This dish can be served as a side or main dish and is perfect for potlucks and parties. Store leftovers in an airtight container in the fridge for 3-4 days. Toss before serving again.
