  • 2 pieces bell peppers (any color), chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Preparation
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Stir in the ground turkey and cook until browned, breaking it apart with a spoon.
  4. Add the bell peppers, chili powder, cumin, salt, and pepper.
  5. Cook until the peppers are tender, about 5-7 minutes.
  6. Serve over rice, in lettuce wraps, or as a filling for tacos.

Notes

Store leftovers in an airtight container for up to 3-4 days or freeze for up to 3 months. Reheat in the microwave or stovetop.
