  • 1 lb ground chicken
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1/4 cup teriyaki sauce
  • 2 tablespoons cooking oil for sautéing
  • 2 cups cooked rice to serve with
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)
  • Green onions for garnish (optional)

Method
 

Cooking
  1. Heat the cooking oil in a large skillet over medium-high heat.
  2. Add the ground chicken to the skillet and cook until browned, breaking it up as it cooks.
  3. Toss in the mixed vegetables and stir-fry for about 5 minutes until tender.
  4. Pour in the teriyaki sauce and mix well, cooking for an additional 2-3 minutes.
  5. Season with salt and pepper to taste.
  6. Serve the stir fry over cooked rice, and garnish with sesame seeds and green onions if desired.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge or freeze for 1-2 months. Reheat in a skillet or microwave until heated through. For added flavor, consider minced garlic or ginger when cooking the chicken. Feel free to swap in different veggies as per availability.
