Ingredients
  

Filling
  • 1 lb lean ground beef You can substitute ground turkey or chicken.
  • 8 pieces flour or corn tortillas Choose your favorite type.
  • 2 cups enchilada sauce Store-bought or homemade.
  • 1 cup shredded cheddar or Monterey Jack cheese Feel free to mix cheeses.
  • 1 medium onion, diced White or yellow onions work well.
  • 2 cloves garlic, minced Don’t skip toasting the garlic!
  • 1 tsp cumin
  • 1 tsp chili powder Adjust to taste.
  • to taste Sour cream For topping.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with the diced onions until they’re translucent, about 5-7 minutes.
  3. Add the minced garlic, cumin, and chili powder; sauté for another minute.
  4. Spoon the beef mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour the enchilada sauce over the tortillas and sprinkle with cheese.
Baking
  1. Bake uncovered for 20-25 minutes until bubbly and golden.

Notes

Garnish with fresh cilantro for added flavor. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months. Reheat in the oven at 350°F until heated through.
