Preparation
- Preheat the grill to medium-high heat.
- In a large bowl, combine the shrimp with olive oil, paprika, salt, and pepper. Toss to coat evenly.
- Mix together avocado, corn, cherry tomatoes, red onion, lime juice, salt, and pepper in another bowl for the salsa.
- In a small bowl, combine Greek yogurt, minced garlic, and a pinch of salt for the garlic drizzle.
Cooking
- Grill the shrimp for about 2-3 minutes on each side until pink and slightly charred.
Assembly
- Place the grilled shrimp at the bottom of a serving bowl, topped with the avocado corn salsa.
- Drizzle with the creamy garlic sauce and garnish with fresh cilantro.
Notes
You can marinate the shrimp in advance for deeper flavors. Skewering shrimp can ease the grilling process.
