Ingredients
  

For the Shrimp
  • 1 pound shrimp, peeled and deveined Use larger shrimp (16-20 count) for the best texture.
  • 1 tablespoon olive oil
  • 1 teaspoon paprika (optional) Add for extra flavor.
  • to taste Salt and pepper Adjust seasoning to preference.
For the Salsa
  • 2 avocados, diced
  • 1 cup corn (fresh or canned)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1 lime, juiced
For the Garlic Drizzle
  • 1/2 cup Greek yogurt Use dairy-free yogurt if needed.
  • 2 cloves garlic, minced
  • a pinch Salt
For Garnish
  • to taste Fresh cilantro

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the shrimp with olive oil, paprika, salt, and pepper. Toss to coat evenly.
  3. Mix together avocado, corn, cherry tomatoes, red onion, lime juice, salt, and pepper in another bowl for the salsa.
  4. In a small bowl, combine Greek yogurt, minced garlic, and a pinch of salt for the garlic drizzle.
Cooking
  1. Grill the shrimp for about 2-3 minutes on each side until pink and slightly charred.
Assembly
  1. Place the grilled shrimp at the bottom of a serving bowl, topped with the avocado corn salsa.
  2. Drizzle with the creamy garlic sauce and garnish with fresh cilantro.

Notes

You can marinate the shrimp in advance for deeper flavors. Skewering shrimp can ease the grilling process.
