  • 2 cups green olives, pitted
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream Can be substituted with coconut cream for a vegan option.
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until soft (about 5 minutes).
  3. Stir in the green olives and cook for another 2 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and let simmer for 15 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in the heavy cream and season with salt and pepper.
  8. Serve hot, garnished with fresh parsley.

Notes

Pairs well with crusty bread or croutons. Store leftovers in the fridge for 3-4 days or freeze for up to 3 months.
