Ingredients
  

For the chicken bowls
  • 2 pieces boneless, skinless chicken breasts
  • 1 cup cooked rice or quinoa
  • 1 piece cucumber, diced
  • 1 piece tomato, diced
  • 1/4 piece red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • to taste Salt
  • to taste Pepper
For Tzatziki sauce
  • 1 cup Greek yogurt
  • 1 piece cucumber (grated)
  • 1 clove garlic (minced)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • to taste Garlic powder

Method
 

Marinate the Chicken
  1. In a bowl, combine olive oil, lemon juice, oregano, salt, and pepper. Add the chicken and let it marinate for at least 30 minutes.
Grill the Chicken
  1. Preheat the grill and cook the chicken for 6-7 minutes on each side or until fully cooked. Let rest before slicing.
Prepare the Tzatziki Sauce
  1. In a separate bowl, mix Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, and garlic powder. Stir until combined and season to taste.
Assemble the Bowls
  1. In each bowl, add cooked rice or quinoa, grilled chicken, diced vegetables, feta cheese, and olives. Top with a generous spoonful of tzatziki sauce.

Notes

Marinate the chicken overnight for extra flavor. Feel free to swap quinoa for brown rice and add leftover veggies. Tzatziki can be made vegan with dairy-free yogurt.
