Main Ingredients
  • 1 pound chicken breast, grilled and sliced Season with salt and pepper.
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 small red onion, thinly sliced
  • 1 cup Kalamata olives, pitted
  • 1 cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste
  • Olive oil (for drizzling)
  • Lemon wedges (for serving)

Method
 

Preparation
  1. Cook quinoa or brown rice according to package instructions and set aside.
  2. Season chicken breasts with salt and pepper, grill until cooked through, then slice.
Assembly
  1. In a serving bowl, layer the quinoa or rice, grilled chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  2. Drizzle with olive oil and garnish with fresh parsley.
