Ingredients
  

Main ingredients
  • 2 cups cooked quinoa or brown rice Use according to package instructions
  • 4 pieces grilled chicken breasts, sliced Fully cooked
  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, diced
  • 1 piece red onion, thinly sliced
  • 1 piece red bell pepper, diced
  • Feta cheese, crumbled For topping
  • Olives, for garnish
  • Fresh parsley, chopped For garnish
  • Salt and pepper, to taste
For Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 piece cucumber, grated and excess water squeezed out
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar
  • Salt, to taste

Method
 

Preparation
  1. Prepare the quinoa or brown rice according to package instructions and set aside.
  2. Grill the chicken breasts until fully cooked, slice them, and set aside.
  3. In a large bowl, combine the cherry tomatoes, cucumber, red onion, red bell pepper, and olives.
  4. To make the tzatziki sauce, in a mixing bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, vinegar, and salt. Mix well.
Assembly
  1. Start with a base of quinoa or brown rice, add sliced chicken, and top with the veggie mixture.
  2. Drizzle with tzatziki sauce and garnish with feta cheese, parsley, and additional salt and pepper to taste.
  3. Serve immediately or store in meal prep containers for later.

Notes

Tip: Don't skip draining the grated cucumber for your tzatziki; it keeps the sauce creamy and not watery. For meal prep, store components separately to maintain freshness.
