Preparation

- To make the tzatziki sauce, in a mixing bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, vinegar, and salt. Mix well.
Assembly
- Start with a base of quinoa or brown rice, add sliced chicken, and top with the veggie mixture.
- Drizzle with tzatziki sauce and garnish with feta cheese, parsley, and additional salt and pepper to taste.
- Serve immediately or store in meal prep containers for later.

Tip: Don't skip draining the grated cucumber for your tzatziki; it keeps the sauce creamy and not watery. For meal prep, store components separately to maintain freshness.
