Preparation
  1. In a mixing bowl, combine the shredded chicken, halved grapes, diced celery, mayonnaise, and Dijon mustard.
  2. Mix well, and sprinkle with salt and pepper to taste.
  3. Slice the croissants in half and layer each with lettuce leaves.
  4. Spoon the chicken salad mixture onto the bottom half of each croissant and close it up.
  5. Serve immediately or refrigerate until you're ready to indulge.

Notes

For an extra refreshing taste, chill the salad mix for about 20 minutes before serving. Store leftovers separately to prevent sogginess.
