Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/4 inch thick rounds.
  3. In a bowl, toss the rounds with olive oil, salt, and pepper until evenly coated.
Cooking
  1. Lay the rounds out on a baking sheet and roast in the oven for about 25-30 minutes, flipping halfway through.
  2. Once they’re soft and caramelized, drizzle honey over the rounds.
  3. Crumble feta cheese on top.
Serving
  1. Garnish with fresh herbs if desired and serve warm.

Notes

For extra crunch, add chopped nuts like walnuts or pecans before baking. For a spicy kick, sprinkle chili flakes on top. You can also swap the honey for maple syrup for a different flavor.
