Preparation
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into 1/4 inch thick rounds.
- In a bowl, toss the rounds with olive oil, salt, and pepper until evenly coated.
Cooking
- Lay the rounds out on a baking sheet and roast in the oven for about 25-30 minutes, flipping halfway through.
- Once they’re soft and caramelized, drizzle honey over the rounds.
- Crumble feta cheese on top.
Serving
- Garnish with fresh herbs if desired and serve warm.
Notes
For extra crunch, add chopped nuts like walnuts or pecans before baking. For a spicy kick, sprinkle chili flakes on top. You can also swap the honey for maple syrup for a different flavor.
