Ingredients
  

For the marinade
  • 3 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons honey or brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon sesame oil
  • to taste Salt and pepper
For the chicken
  • 2 pounds chicken thighs or breasts
For serving
  • 4 servings cooked rice For serving underneath the chicken
  • as needed Vegetables (e.g., broccoli, bell peppers, or carrots)

Method
 

Preparation
  1. In a bowl, combine gochujang, soy sauce, rice vinegar, honey, garlic, sesame oil, and a sprinkle of salt and pepper. This will be your marinade.
  2. Add the chicken to the marinade and ensure it’s well coated. The longer it marinates (30 minutes to overnight), the better!
Cooking
  1. Preheat your grill or skillet over medium-high heat.
  2. Cook the marinated chicken for about 6-7 minutes on each side or until it’s fully cooked and has a nice char.
  3. Remove from heat, let it rest for a few minutes, then slice it up.
Serving
  1. Serve it over rice with your choice of colorful vegetables.

Notes

For a twist, use tofu or tempeh instead of chicken for a vegan dish. Also, chopped nuts or seeds can be added for extra crunch. Gochujang can be adjusted according to your spice preference.
