Ingredients
  

Dough Ingredients
  • 2 cups gluten-free all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 3/4 cup warm water About 110°F (43°C)
  • 1 tablespoon olive oil
Boiling Ingredients
  • 1/4 cup baking soda
  • Coarse to taste sea salt for sprinkling

Method
 

Preparation
  1. In a bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
  2. Add olive oil and salt to the yeast mixture.
  3. Gradually mix in the gluten-free flour until a dough forms.
  4. Knead the dough for a few minutes until smooth and cohesive.
  5. Cover the dough and let it rise in a warm place for about 30 minutes.
  6. Preheat the oven to 425°F (220°C).
Cooking
  1. In a large pot, bring water and baking soda to a boil.
  2. Divide the dough into small pieces and shape them into bites.
  3. Boil the pretzel bites in the baking soda water for about 30 seconds.
  4. Remove and place on a baking sheet lined with parchment paper.
  5. Sprinkle with coarse sea salt.
  6. Bake for 12-15 minutes or until golden brown.

Notes

Serve warm, paired with creamy cheese dip or mustard for dipping. Store in an airtight container in the fridge for up to a week, or freeze for a month.
