  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted or use coconut oil for dairy-free option
  • 2 large eggs room temperature
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon lemon zest freshly grated
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
For Serving
  • Powdered sugar for dusting optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a large mixing bowl, combine the melted butter and sugar. Whisk until smooth and creamy.
  3. Add the eggs, lemon juice, and lemon zest to the bowl, mixing until well combined and fluffy.
  4. In a separate bowl, whisk together the gluten-free flour, baking powder, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Do not overmix.
  6. Pour the batter into the prepared baking pan and spread it evenly.
Baking
  1. Place the pan in the oven and bake for 20-25 minutes. Check for doneness using a toothpick.
  2. Allow the brownies to cool in the pan before dusting with powdered sugar (if desired) and cutting into squares.
