- In a large pot, heat olive oil over medium heat.

- Reduce heat, add the broken lasagna noodles, and let simmer for about 15 minutes until noodles are tender.
- Stir in the spinach or kale until wilted.
- Serve hot, topped with dairy-free cheese and fresh basil.
