Ingredients
  

Dry Ingredients
  • 2 cups gluten-free all-purpose flour
  • 1 tablespoon active dry yeast
  • 1 teaspoon salt
  • 1 teaspoon sugar
Wet Ingredients
  • 1 cup warm water Make sure it's warm but not hot.
  • 2 tablespoons olive oil
Flavoring
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Method
 

Preparation
  1. In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a separate bowl, mix gluten-free flour and salt.
  3. Add the yeast mixture and olive oil to the flour mixture. Stir until combined.
  4. Fold in the minced garlic and herbs.
Rising
  1. Transfer the dough to a greased baking pan and spread it out evenly.
  2. Cover the pan with a towel and let it rise for 30 minutes.
Baking
  1. Preheat the oven to 400°F (200°C).
  2. Bake for 20-25 minutes or until golden brown.
  3. Let it cool slightly before slicing and serving.

Notes

For a softer texture, try adding a tablespoon of yogurt to the dough. Experiment with herbs! Mix in thyme, oregano, or basil to suit your taste. Always remember to let your yeast come alive; this is what gives your focaccia those delightful air pockets.
