  • 1 cup all-purpose gluten-free flour blend
  • ½ teaspoon xanthan gum
  • ½ teaspoon kosher salt
  • teaspoon baking soda
  • ½ teaspoon smoked Spanish paprika Adds a smoky flavor
  • 4 tablespoons cold unsalted butter Can be substituted with dairy-free options
  • 8 ounces sharp yellow Cheddar cheese Feel free to experiment with different cheeses
  • 2 tablespoons cold water Plus more as needed to form the dough

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line rimmed baking sheets with parchment paper.
  2. In a food processor, combine gluten-free flour, xanthan gum, salt, baking soda, paprika, butter, and Cheddar cheese.
  3. Add 2 tablespoons of cold water and pulse. Gradually add more water by half-teaspoon until a dough forms.
  4. Roll out the dough to 1/4 inch thick.
  5. Cut into goldfish shapes and place them on the prepared baking sheets.
Baking
  1. Bake for 10 to 12 minutes until they’re light golden brown.

Notes

Store in an airtight container for up to 5 days or freeze for up to 2 months. For extra crispiness, roll the dough thinner. You can also add herbs like rosemary or thyme for a unique flavor twist.
