  • 1 recipe gluten free pizza dough Prepare according to your favorite recipe.
  • 4 cloves garlic (peeled and minced) Fresh garlic enhances flavor.
  • 1/2 teaspoon kosher salt Adjust to taste.
  • 4 tablespoons unsalted butter (melted) Use unsalted for better control of salt content.
  • 1 ounce finely grated Parmigiano-Reggiano cheese Freshly grated cheese is preferred.
  • 8 ounces part-skim mozzarella cheese (grated) Use fresh mozzarella for a better melt.

Preparation
  1. Make the pizza dough according to the recipe instructions.
  2. Place the dough in a sealed container or bowl in a warm, draft-free location to rise for 1 to 2 hours or until risen.
  3. Pop the risen dough into the fridge for about 30 minutes until firmer.
  4. Optionally, set it to rise in the refrigerator for about 12 hours or up to 5 days.
Cooking
  1. Preheat your oven to 400°F, placing a pizza stone on the bottom rack.
  2. Roll the dough into an oval shape, about 12 inches x 15 inches.
  3. Mix minced garlic and kosher salt with melted butter to form a paste.
  4. Brush the garlic butter mixture all over the dough.
  5. Sprinkle on the grated Parmigiano-Reggiano cheese, followed by the mozzarella.
  6. Transfer the dough to the hot pizza stone and bake for about 10 minutes until golden.
  7. Let it set, slice into sticks, and enjoy!

Notes

Store leftovers in the fridge for about 3-4 days in an airtight container. You can also freeze them for up to a month. Reheat in the oven or toaster for the best results. Serve with marinara sauce or ranch dip.
