  • 2 cups cooked rice (gluten-free) Using day-old rice is recommended for better texture.
  • 1 cup chicken breast, diced
  • 1 cup frozen veggies (like peas and carrots) Can use mixed frozen vegetables.
  • 2 pieces eggs Scramble them in the pan.
  • 2 tbsp gluten-free soy sauce
  • 1 tbsp sesame oil
  • 2 pieces green onions, chopped For seasoning and garnishing.
  • Salt and pepper to taste

Method
 

Cooking Instructions
  1. Heat the sesame oil in a pan over medium heat.
  2. Add the diced chicken to the pan and cook until it's fully cooked through.
  3. Push the chicken aside and toss in the frozen veggies. Sauté them for a minute or two.
  4. Crack the eggs into the pan and scramble them until they're fully cooked.
  5. Mix the cooked rice with the chicken and veggies in the pan.
  6. Pour the soy sauce over everything and give it a good stir.
  7. Season with green onions, salt, and pepper to taste, then serve!

Notes

For enhanced flavor, don’t skip the seasoning. Leftovers can be stored in the fridge for 3-4 days or frozen for about a month. Reheat on stove or microwave.
