Method
Preparation of Dough
- In a mixing bowl, combine the gluten-free flour and salt.
- Add the cold butter and mix until the mixture resembles coarse crumbs.
- Gradually add the ice water, mixing until the dough comes together.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Assembly and Baking
- Preheat the oven to 375°F (190°C).
- Roll out the dough on a floured surface to about 1/8 inch thick.
- Cut out circles using a round cutter or glass.
- Place filling of choice (meat, cheese, or veggies) in the center of each circle.
- Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.
- Place the empanadas on a baking sheet. Brush with beaten egg if using.
- Bake for 20-25 minutes or until golden brown.
- Serve warm and enjoy!

Chill your dough to make it easier to handle. Feel free to experiment with various fillings and shapes!
