Dough Ingredients
  • 2 cups gluten-free all-purpose flour
  • 1/2 cup cold butter, diced
  • 1/2 teaspoon salt
  • 1/4 cup ice water
Filling Options
  • 1 cup cooked meat (beef, chicken, or pork) or cooked vegetables
  • 1 cup cheese (cheddar or mozzarella) or other preferred filling (e.g., spinach, mushrooms)
  • 1 each egg (for egg wash, optional)

Method
 

Preparation of Dough
  1. In a mixing bowl, combine the gluten-free flour and salt.
  2. Add the cold butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, mixing until the dough comes together.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Assembly and Baking
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the dough on a floured surface to about 1/8 inch thick.
  3. Cut out circles using a round cutter or glass.
  4. Place filling of choice (meat, cheese, or veggies) in the center of each circle.
  5. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.
  6. Place the empanadas on a baking sheet. Brush with beaten egg if using.
  7. Bake for 20-25 minutes or until golden brown.
  8. Serve warm and enjoy!
