  • 4 large eggs
  • 0.5 teaspoon salt
  • 1 tablespoon olive oil

Preparation
  1. In a large bowl, combine the gluten-free flour and salt.
  2. Make a well in the center and add the eggs and olive oil.
  3. Mix until combined, adding water if necessary to form a dough.
  4. Knead the dough for a few minutes until smooth.
  5. Roll out the dough to your desired thickness and cut into noodle shapes.
Cooking
  1. Cook the noodles in boiling water for 2-4 minutes until they float to the top.
  2. Drain and serve with your favorite sauce or dish.

Notes

These noodles are best enjoyed fresh but can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 3 months. Don’t skip kneading for better texture, and feel free to experiment with different flour blends.
