Ingredients
  

Brownie Base
  • 1 cup unsalted butter, melted
  • 1.75 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 0.75 cup unsweetened cocoa powder (Dutch-processed recommended)
  • 0.75 teaspoon baking powder
  • 0.5 teaspoon salt
  • 3 large eggs, room temperature
  • 2/3 cup gluten-free all-purpose flour blend (with xanthan gum)
  • 1 cup gluten-free semi-sweet chocolate chips (optional) For extra chocolatey goodness
Cream Cheese Swirl
  • 8 ounces cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the melted butter and granulated sugar until well combined. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the cocoa powder, baking powder, and salt. Gradually add this mixture to the wet ingredients and stir until just combined.
  4. Add the eggs one at a time, beating well after each addition until smooth and glossy.
  5. If using, gently fold in the gluten-free chocolate chips.
  6. In another bowl, beat the softened cream cheese with 1/3 cup granulated sugar until smooth. Mix in the egg yolk and 1 teaspoon vanilla extract until incorporated.
Baking
  1. Pour about two-thirds of the brownie batter into the prepared pan, spreading it evenly.
  2. Dollop spoonfuls of the cream cheese mixture on top, then cover with the remaining brownie batter.
  3. With a toothpick or thin knife, gently swirl the cream cheese into the brownie batter.
  4. Bake for 30-35 minutes until a toothpick inserted in the center comes out with moist crumbs.
  5. Let them cool completely in the pan on a wire rack before lifting out and cutting into squares.

Notes

Serve warm with vanilla ice cream, dust with powdered sugar, and enjoy! Store in an airtight container in the fridge for up to a week or freeze for about 3 months.
