Ingredients
  

Wet Ingredients
  • 1/2 cup milk (I used almond milk, at room temperature) Use any milk of your choice.
  • 1/2 cup maple syrup Can be substituted with honey.
  • 1/4 cup unsweetened apple sauce Adds moisture.
  • 1/3 cup melted coconut oil (or melted butter) Either works well for this recipe.
  • 2 large eggs (at room temperature) Use flaxseed meal and water for a vegan option.
  • 1 teaspoon vanilla extract Adds flavor.
Dry Ingredients
  • 2 cups gluten-free all-purpose flour Check for a gluten-free blend.
  • 1 cup almond flour Can be substituted with coconut flour (adjust liquid).
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
Filling and Topping
  • 1 apple (cored and very thinly sliced) Use your favorite apple variety.
  • 1/2 cup sugar For topping.
  • 1 teaspoon cinnamon For topping.
  • 1 tablespoon melted butter (or melted coconut oil) For greasing the pan.

Method
 

Preparation
  1. Preheat your oven to 350° Fahrenheit and prep a 9×9-inch cake pan by lining and lightly greasing it.
  2. In a large bowl, whisk together the milk, maple syrup, apple sauce, melted coconut oil, eggs, and vanilla extract until well combined.
  3. Gently fold in the gluten-free all-purpose flour, almond flour, baking powder, baking soda, and cinnamon until just mixed.
  4. Fold the thinly sliced apples into the batter until evenly distributed.
Baking
  1. Transfer the batter to your prepared cake pan.
  2. In a small bowl, mix the sugar and remaining cinnamon for the topping, then sprinkle it evenly over the batter.
  3. Bake for 30 minutes, or until a toothpick comes out clean from the center.
  4. Once baked, let the cake cool on a wire rack before serving.
  5. Drizzle with powdered sugar icing for that extra oomph just before serving!

Notes

This cake can be made a day in advance and stored in the fridge. Also, you can freeze it for up to a month. To reheat, microwave for a few seconds or let come to room temperature.
