Preparation
- Preheat your oven to 350° Fahrenheit and prep a 9×9-inch cake pan by lining and lightly greasing it.
- In a large bowl, whisk together the milk, maple syrup, apple sauce, melted coconut oil, eggs, and vanilla extract until well combined.
- Gently fold in the gluten-free all-purpose flour, almond flour, baking powder, baking soda, and cinnamon until just mixed.
- Fold the thinly sliced apples into the batter until evenly distributed.
Baking
- Transfer the batter to your prepared cake pan.
- In a small bowl, mix the sugar and remaining cinnamon for the topping, then sprinkle it evenly over the batter.
- Bake for 30 minutes, or until a toothpick comes out clean from the center.
- Once baked, let the cake cool on a wire rack before serving.
- Drizzle with powdered sugar icing for that extra oomph just before serving!
Notes
This cake can be made a day in advance and stored in the fridge. Also, you can freeze it for up to a month. To reheat, microwave for a few seconds or let come to room temperature.
