Ingredients
  

Dough Ingredients
  • 3.5 cups gluten-free all-purpose flour Ensure it includes xanthan gum
  • 1 packet active dry yeast 2 ¼ teaspoons
  • ¾ cup warm milk or almond milk for a dairy-free option
  • ¼ cup granulated sugar
  • 2 large eggs Room temperature
  • ¼ cup unsalted butter Melted; use vegan butter if dairy-free
  • ½ teaspoon salt
Filling Ingredients
  • ½ cup brown sugar or coconut sugar for a refined sugar-free option
  • 2 tablespoons ground cinnamon
  • ¼ cup unsalted butter Softened; or vegan butter
Glaze Ingredients
  • 1 cup powdered sugar
  • 3 tablespoons milk or almond milk
  • ½ teaspoon vanilla extract

Method
 

Preparation
  1. In a small bowl, combine warm milk and yeast. Let it sit for about 5-10 minutes until frothy.
  2. In a large bowl, whisk together flour, sugar, salt, and melted butter. Stir in the eggs and the activated yeast mixture until combined.
  3. Cover the bowl with a clean kitchen towel, and let the dough rise for about an hour in a warm place.
  4. Once risen, transfer the dough to a floured surface and roll it out into a rectangle.
Assembly
  1. Spread softened butter, brown sugar, and cinnamon over the dough.
  2. Roll it up tightly and slice into pieces.
  3. Place the rolls in a lined baking dish, cover them again and let rise for another 30 minutes.
Baking
  1. Preheat your oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
Glazing
  1. Whisk together powdered sugar, milk, and vanilla. Drizzle over the warm rolls and enjoy!

Notes

Enjoy these rolls within a week if stored in the fridge. Freeze unglazed for up to three months.
