  • 2 cups gluten-free all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup melted butter or coconut oil
  • 1 large egg
  • 1 tablespoon cinnamon
  • 1/4 cup brown sugar
Icing Ingredients
  • 1/2 cup powdered sugar
  • 1 tablespoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the gluten-free flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, melted butter, and egg.
  4. Combine the wet and dry ingredients until a dough forms.
  5. Roll out the dough on a floured surface into a rectangle.
  6. Spread melted butter over the dough, then sprinkle with cinnamon and brown sugar.
  7. Roll the dough tightly and cut into rolls.
  8. Place the rolls in a greased baking dish.
Baking
  1. Bake for 25-30 minutes.
Icing
  1. While baking, mix powdered sugar and vanilla extract to make icing.
  2. Once baked, drizzle the icing over the warm rolls and serve.

Notes

For best texture, let the dough rest for a few minutes before rolling. You can store leftovers in an airtight container in the fridge for about 3-4 days or freeze them for up to 3 months. Reheat in the oven before serving.
