Ingredients
  

Dough Ingredients
  • 2 cups gluten-free all-purpose flour Use a blend containing xanthan gum for best results.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup coconut oil or vegan butter Butter can be used for richer flavor.
  • 3 tablespoons sugar
  • 1/2 cup almond milk or any dairy-free milk Oat, soy, or cashew milk can also be used.
  • 1 tablespoon vanilla extract
Filling Ingredients
  • 1 tablespoon cinnamon
  • 1/4 cup sugar (for filling)
Glaze Ingredients
  • 1 cup powdered sugar
  • 2-3 tablespoons almond milk Adjust for desired consistency.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix gluten-free flour, baking powder, and salt.
  3. Add coconut oil and sugar, then mix well.
  4. Gradually stir in almond milk and vanilla extract until a dough forms.
Assembling the Rolls
  1. Roll the dough into a rectangle on a floured surface.
  2. Sprinkle cinnamon and sugar mixture over the rolled dough.
  3. Roll tightly into a log and cut into pieces.
  4. Place the rolls on a baking sheet and bake for 20-25 minutes until golden.
Making the Glaze
  1. For the glaze, mix powdered sugar with almond milk until smooth.
  2. Drizzle the glaze over the warm rolls and serve.

Notes

Let your rolls cool a bit before glazing for the best texture. Consider adding chocolate chips or orange zest for variation!
