  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted Can substitute with coconut oil for a vegan option.
  • 1 cup milk (dairy or non-dairy) Use plant-based milk for a vegan option.
Filling and Glaze Ingredients
  • 1 tablespoon cinnamon Generously sprinkle on the dough.
  • 1/4 cup brown sugar
  • 1/4 cup icing sugar For glaze.
  • 1-2 tablespoons milk For glaze; adjust for desired consistency.

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the gluten-free flour, sugar, baking powder, and salt.
  3. Add the melted butter and milk, and mix until a dough forms.
  4. Roll out the dough on a flour-dusted surface into a rectangle.
  5. In a small bowl, mix cinnamon and brown sugar; sprinkle generously over the dough.
  6. Roll the dough tightly into a log and slice it into rolls.
  7. Place the rolls on the prepared baking sheet and bake for 20-25 minutes until golden brown.
  8. For the glaze, whisk icing sugar with milk until smooth and drizzle it over the warm rolls.

Notes

These rolls are best enjoyed fresh, but they can last up to 5 days in the fridge in an airtight container. You can also freeze them for up to 2 months. Reheat in the microwave for a few seconds.
