  • cup white cane sugar
  • cup light brown sugar (packed)
  • 1 pcs egg (room temperature)
  • 1 tsp vanilla extract
  • cups gluten-free measure-for-measure flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • cups chocolate chips

Method
 

Preparation
  1. Preheat the oven to 350°F and line your baking sheets with silicone mats or parchment paper.
  2. Cream the softened butter and sugars together for about 3-4 minutes until nice and creamy.
  3. Add the egg and vanilla extract; mix until everything is well combined.
  4. Stir in the gluten-free flour, baking soda, and salt until just mixed. Don’t overdo it!
  5. Fold in the chocolate chips.
Baking
  1. Scoop dough onto the prepared baking sheets, spacing them out to allow for spreading.
  2. Bake for 10-12 minutes, until the edges are beautifully golden.
  3. Allow cooling slightly before transferring the cookies to a wire rack.

Notes

For extra chewiness, let the dough chill in the fridge for an hour before baking. You can also experiment with different types of chocolate or add nuts for extra flavor.
