  • 1 sheet gluten-free puff pastry, thawed
  • 4 ounces cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon fresh lemon juice
  • 1 large egg, lightly beaten (for egg wash)
  • 1 tablespoon powdered sugar (optional, for dusting)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Unfold the thawed gluten-free puff pastry sheet onto the prepared pan.
  3. In a small bowl, beat together the softened cream cheese, granulated sugar, vanilla extract, and lemon juice until smooth and creamy.
  4. Cut the pastry sheet into 4 equal squares.
  5. Spoon a generous tablespoon of the cream cheese mixture into the center of each square.
  6. Fold two opposite corners of each square into the center, pressing down lightly to seal.
  7. Brush the tops with the beaten egg wash.
Baking
  1. Bake for 15-18 minutes, or until the pastries are puffed up and a deep golden brown.
  2. Cool for a few minutes on the baking sheet before dusting with powdered sugar.

Notes

Thaw your pastry properly. For added flavor, try adding a pinch of cinnamon or nutmeg to the filling. The powdered sugar adds a sweet finishing touch.
