Dry Ingredients
  • 1 cup gluten free flour blend
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
Wet Ingredients
  • 1/2 cup unsalted butter, softened Make sure the butter is truly softened.
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the gluten free flour, baking soda, salt, cinnamon, cardamom, ginger, and cloves.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Baking
  1. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are lightly golden.
  3. Allow them to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

Serve with a cup of chai tea or hot cocoa. For added texture, consider adding chocolate chips or nuts. Store in an airtight container for up to one week.
