Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the gluten free flour, baking soda, salt, cinnamon, cardamom, ginger, and cloves.
- In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Baking
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow them to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
Notes
Serve with a cup of chai tea or hot cocoa. For added texture, consider adding chocolate chips or nuts. Store in an airtight container for up to one week.
