Ingredients

  • 8 tablespoons unsalted butter, melted and cooled
  • 1/2 cup gluten-free flour blend
  • 1/4 teaspoon xanthan gum omit if your blend already contains it
  • 1 cup old-fashioned rolled oats
  • 1/4 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1/8 teaspoon kosher salt
  • 1/2 teaspoon baking powder
For the filling
  • 2 cups fresh blueberries (about 12 ounces), rinsed and patted dry
  • 2 tablespoons granulated sugar
  • 2 tablespoons oat flour
  • 1/8 teaspoon kosher salt
For the crust construction
  • 1 egg beaten and at room temperature
  • 1 to 2 tablespoons lukewarm water

Preparation
  1. Preheat your oven to 325°F.
  2. Grease a 9-inch square baking pan, lining it with crisscrossed sheets of unbleached parchment paper for easy lifting.
  3. Make the crumble topping by combining melted butter, oats, flour, and sugar in a bowl.
  4. Create the crust by mixing together the necessary ingredients until well incorporated.
  5. Prepare the fruit layer by combining blueberries with sugar and oat flour.
  6. Assemble all layers together in the pan.
  7. Bake in the preheated oven until golden and firm.
  8. Allow to cool before slicing and serving.

Notes

Use room-temperature ingredients for a smoother batter. Chill the butter before mixing for a flakier crust. For added flavor, consider mixing in a handful of chopped nuts or cinnamon. These bars can be served warm with ice cream or honey.
