Ingredients
  

For the bread
  • 4 tablespoons unsalted butter (melted)
  • 1/2 cup packed light brown sugar
  • 1/2 cup all-purpose gluten-free flour blend
  • 1/4 teaspoon xanthan gum (omit if your blend already contains it)
  • 1/8 teaspoon kosher salt
  • 1 3/4 cups all-purpose gluten-free flour blend
  • 1 teaspoon xanthan gum (omit if your blend already contains it)
  • 3/8 cup cornstarch
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 6 tablespoons unsalted butter (melted and cooled)
  • 3/4 cup granulated sugar
  • 2 large eggs (at room temperature)
  • 1 tablespoon pure vanilla extract
  • 1 cup sour cream (at room temperature)
  • 5 ounces blueberries (fresh or frozen; don’t defrost if frozen)
For the topping
  • 1/2 cup flour
  • 2 tablespoons unsalted butter
  • 2 tablespoons sugar

Method
 

Preparation
  1. Preheat your oven to 325°F. Grease and line a standard 9-inch x 5-inch loaf pan with unbleached parchment paper and set it aside.
  2. Make the topping by mixing flour, butter, and sugar until crumbly.
  3. Combine wet ingredients (melted butter, eggs, sour cream) in one bowl and dry ingredients (all flour blends, xanthan gum, cornstarch, baking powder, salt) in another.
  4. Mix the wet and dry ingredients together just until combined. Lumps are welcome!
  5. Gently fold in the blueberries.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Bake for about an hour, or until the top is golden and a toothpick comes out clean.

Notes

Slice the bread warm and spread with butter or cream cheese for the perfect serving. For storage, keep it wrapped at room temperature for 3-4 days or freeze for up to 3 months. Remember to microwave a slice for a fresh taste!
