Preparation
- Preheat your oven to 325°F. Grease and line a standard 9-inch x 5-inch loaf pan with unbleached parchment paper and set it aside.
- Make the topping by mixing flour, butter, and sugar until crumbly.
- Combine wet ingredients (melted butter, eggs, sour cream) in one bowl and dry ingredients (all flour blends, xanthan gum, cornstarch, baking powder, salt) in another.
- Mix the wet and dry ingredients together just until combined. Lumps are welcome!
- Gently fold in the blueberries.
Baking
- Pour the batter into the prepared loaf pan.
- Bake for about an hour, or until the top is golden and a toothpick comes out clean.
Notes
Slice the bread warm and spread with butter or cream cheese for the perfect serving. For storage, keep it wrapped at room temperature for 3-4 days or freeze for up to 3 months. Remember to microwave a slice for a fresh taste!
