Preparation
  1. In a mixing bowl, combine the gluten-free flour, sugar, salt, baking powder, and baking soda.
  2. In another bowl, whisk together the buttermilk and egg until smooth.
  3. Gradually add the wet mixture to the dry ingredients, mixing until a smooth dough forms.
Frying
  1. Heat oil in a deep fryer or pot to 350°F (175°C).
  2. Drop spoonfuls of dough into the hot oil and fry until golden brown on all sides, about 3-4 minutes.
  3. Remove and let drain on paper towels.
  4. Dust with powdered sugar before serving.

Notes

Letting the dough rest for about 30 minutes in the fridge can enhance the texture. Ensure oil is at the right temperature; too hot will burn them, too cool will make them greasy. Consider adding a splash of vanilla extract or cinnamon for flavor.
