Ingredients
  

Dry Ingredients
  • 1 1/2 cup gluten free flour blend (210 g)
  • 3/4 teaspoon xanthan gum (only if the blend doesn’t already contain it)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons light brown sugar (28 g)
Wet Ingredients
  • 2/3 cup milk, dairy or non-dairy (160 ml)
  • 1 tablespoon oil (15 ml)
  • 2 eggs or 6 tablespoons aquafaba (90 ml)
  • 2 teaspoons vanilla extract
Fritter Filling
  • 2 apples peeled and finely diced
Icing
  • 3 cups powdered/icing sugar (375 g)
  • 3 tablespoons milk, dairy or non-dairy (45 ml)
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Whisk together the flour, xanthan gum, baking powder, salt, cinnamon, nutmeg, and sugar in a large mixing bowl.
  2. Stir in the milk, oil, eggs (or aquafaba), and vanilla extract. Whisk until the batter is thick and smooth with no lumps.
  3. Gently mix in the diced apples.
Cooking
  1. In a large skillet or pot, add frying oil (about 1 1/2 - 2 inches deep). Heat to medium-high, aiming for 360-375°F/80-90°C.
  2. Once hot, use a big spoon to scoop out some batter (about 1-2 tablespoons) and drop it into the oil. Avoid splashes and leave some space for frying.
  3. Fry each fritter for about 3 minutes on one side before flipping and cooking for another 2-3 minutes. Repeat until all batter’s cooked up.
  4. Carefully remove the fritters and cool them on a wire rack.
Icing
  1. For the icing, whisk the powdered sugar, milk, and vanilla extract until smooth. Adjust with more sugar or milk for your desired thickness.
  2. Dip each fritter in the glaze and let the excess drip off before indulging!

Notes

For optimal results, check that your gluten-free flour blend includes xanthan gum, or add it for that perfect texture. Allow fritters to cool slightly before glazing to help the icing stick on better.
