Garlic Shrimp Crostini with Avocado

Ingredients
  

For the Crostini
  • 10-12 slices baguette slices (about ½” thick)
  • 6 tbsp olive oil, divided
  • 1 teaspoon garlic powder
For the Avocado Spread
  • 1 avocado Choose a ripe avocado for creaminess.
  • ½ cup Juice of lime
  • ¼ teaspoon salt To taste.
  • ¼ teaspoon black pepper To taste.
For the Shrimp
  • 12 large shrimp, peeled and deveined
  • 2 cloves garlic, cut into slivers
  • ¾ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 350°F and move the rack to the top.
  2. Line a baking sheet with parchment paper.
  3. Slice baguette into 10-12 pieces, each about ½ inch thick.
  4. Place baguette slices in a single layer on the baking sheet.
  5. In a small bowl, mix 3 tablespoons of olive oil with 1 teaspoon of garlic powder.
  6. Brush both sides of the baguette slices with the garlic oil mixture.
Baking
  1. Bake crostini for 10-15 minutes, keeping a close eye on them.
Cooking the Shrimp
  1. Mash the avocado in a bowl, adding lime juice, salt, and black pepper.
  2. In a skillet, heat remaining 3 tablespoons of olive oil over low heat and cook garlic slivers for about 2 minutes.
  3. Raise heat to medium-high, add shrimp, season with smoked paprika, cumin, salt, and black pepper. Cook until shrimp turns pink, about 3-5 minutes.
Assembly
  1. Once crostini are crispy, layer on avocado spread and top with shrimp.
  2. Serve immediately and enjoy your creation!

Notes

Serve with a chilled white wine or refreshing cocktail. Store shrimp and avocado separately in the fridge for up to 2 days.
