Preparation
- Preheat your oven to 350°F and move the rack to the top.
- Line a baking sheet with parchment paper.
- Slice baguette into 10-12 pieces, each about ½ inch thick.
- Place baguette slices in a single layer on the baking sheet.
- In a small bowl, mix 3 tablespoons of olive oil with 1 teaspoon of garlic powder.
- Brush both sides of the baguette slices with the garlic oil mixture.
Baking
- Bake crostini for 10-15 minutes, keeping a close eye on them.
Cooking the Shrimp
- Mash the avocado in a bowl, adding lime juice, salt, and black pepper.
- In a skillet, heat remaining 3 tablespoons of olive oil over low heat and cook garlic slivers for about 2 minutes.
- Raise heat to medium-high, add shrimp, season with smoked paprika, cumin, salt, and black pepper. Cook until shrimp turns pink, about 3-5 minutes.
Assembly
- Once crostini are crispy, layer on avocado spread and top with shrimp.
- Serve immediately and enjoy your creation!
Notes
Serve with a chilled white wine or refreshing cocktail. Store shrimp and avocado separately in the fridge for up to 2 days.
