Preparation
- Preheat the oven to 425°F (220°C).
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain and let them cool slightly.
- On a baking sheet, arrange the potatoes and gently crush each one with a fork or potato masher.
- Drizzle olive oil and sprinkle minced garlic, salt, and pepper over the top.
Baking
- Bake for 20-25 minutes or until crispy and golden.
- Once out of the oven, sprinkle Parmesan cheese over the potatoes and return to the oven for an additional 5 minutes.
- Garnish with fresh parsley if desired and serve hot.
Notes
These potatoes can be stored in the fridge for up to 3-4 days. For best texture, reheat in the oven and not in the microwave.
