  • 1 lb large shrimp, peeled and deveined (tails on or off)
  • 2 tablespoons olive oil
  • 4 cloves garlic, very finely chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/3 cup Parmesan, finely grated
  • 1/2 teaspoon kosher salt more to taste
  • 1/4 teaspoon black pepper
  • 1 pinch red pepper flakes optional
  • 1 tablespoon lemon juice plus wedges for serving
  • 2 tablespoons fresh parsley, chopped optional

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper or aluminum foil.
  2. Pat the shrimp dry with paper towels and place them in a mixing bowl.
  3. Add olive oil, garlic, oregano, basil, Parmesan, salt, and pepper (and red pepper flakes if using). Toss until everything is evenly coated.
Cooking
  1. Spread the shrimp in a single layer on the baking sheet, leaving a bit of space between each piece.
  2. Roast for 6 to 9 minutes (depending on shrimp size) until they turn pink, opaque, and just firm to the touch.
  3. Drizzle with lemon juice and sprinkle with parsley before serving. Enjoy hot!

Notes

Serve hot and garnished with parsley and lemon wedges. Pair with crispy garlic bread or a fresh salad for a complete meal. Leftovers can be stored in the fridge for up to 2 days or frozen for 2 months. To reheat, use a splash of olive oil to maintain tenderness.
