  • 1 cup breadcrumbs Panko breadcrumbs for extra crunch recommended
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced Toasting garlic before mixing enhances flavor
  • 1 teaspoon dried Italian herbs
  • to taste Salt and pepper
  • 2 pieces eggs, beaten
  • Olive oil for frying

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix together the breadcrumbs, Parmesan cheese, minced garlic, Italian herbs, salt, and pepper.
  3. Dip each chicken breast in the beaten eggs, then coat thoroughly with the breadcrumb mixture.
Cooking
  1. Heat some olive oil in a skillet over medium heat, then fry the chicken breasts for 3-4 minutes on each side until golden brown.
  2. Transfer the breasts to a baking dish and bake for 15-20 minutes until cooked through.
  3. Serve hot and enjoy the delightful crunch!

Notes

Leftovers can be stored in the fridge for up to 3 days or frozen for up to 2 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes for best results.
