Preparation
  1. Preheat oven to 400°F (200°C).
  2. In a large oven-safe skillet, melt butter over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Season chicken breasts with salt, pepper, and Italian herbs, then add them to the skillet.
  5. Cook chicken for about 5 minutes on each side until browned.
  6. Toss in the halved baby potatoes into the skillet with the garlic butter.
  7. Sprinkle grated Parmesan over the chicken and potatoes.
  8. Transfer skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through and potatoes are tender.
  9. Garnish with fresh parsley before serving.

Notes

Use fresh parsley for garnish for extra flavor. You can swap the chicken for salmon for a different taste. Consider adding vegetables like broccoli or asparagus for added crunch. To achieve an extra cheesy crust, add more Parmesan in the last few minutes of baking.
