Preparation
  1. In a small saucepan, heat the olive oil over medium heat.
  2. Add the minced garlic and red pepper flakes, and sauté until the garlic is golden and fragrant, about 3-5 minutes.
  3. Remove from heat and stir in salt and fresh herbs.
  4. Let the oil cool, then transfer to a clean bottle or jar.
  5. Allow to infuse for at least 24 hours before using.

Notes

Store in a clean, airtight bottle or jar in a cool, dark place. Should last for about 1 month. Discard if any off smells or colors are noticed. To prevent bitterness, do not burn the garlic while heating.
