Method
Cooking Potatoes
- Heat olive oil and 1 Tablespoon of butter in a large cast iron skillet over medium-high heat.
- Add the potatoes and cook undisturbed for 1-2 minutes to form a crust.
- Continue cooking for 5-6 minutes, until golden brown and fork-tender.
- Stir in 3 cloves of garlic, 1 teaspoon each of rosemary and thyme, along with salt and pepper. Cook for an additional 1-2 minutes until the garlic becomes soft and fragrant.
- Remove the potatoes and set aside.
Cooking Steak
- Increase the skillet temperature to high heat and melt the remaining 3 Tablespoons of butter.
- Add the steak bites and sear for 1-2 minutes without stirring.
- Once a crust forms, add the remaining garlic and cook until golden brown and at 135°F, about 1-2 more minutes.
- Stir in the remaining herbs, tilting the skillet to gather butter and herbs, then drizzle over the steak bites.
- Return the potatoes to the skillet, mix well, and serve immediately.
Notes
For perfect doneness, use a meat thermometer to check the steak. Leftovers can be stored in an airtight container in the fridge for up to 3 days, or frozen for up to 3 months. To reheat, use the oven or skillet.
