  • 400 g spaghetti Use whole wheat for extra fiber
  • 250 g Italian sausage Spicy Italian sausage can be used for more flavor
Vegetables
  • 3 cups fresh spinach Can add more vegetables like bell peppers or mushrooms
  • 4 cloves garlic, minced Add extra cloves for a stronger garlic flavor
Cheese
  • 1 cup shredded mozzarella cheese Feel free to add more for extra cheesiness
  • 1/3 cup grated Parmesan cheese Add more for garnishing
Miscellaneous
  • 4 tablespoons butter Use vegan butter for a plant-based version
  • 1 tablespoon olive oil For cooking the sausage

Method
 

Cooking
  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti and cook until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the sausage, crumble it as it cooks, and sauté until browned. Remove and set aside.
  4. In the same skillet, toss in the butter and minced garlic. Cook for 1 minute until fragrant.
  5. Add the spinach and sauté until wilted.
  6. Return the cooked sausage to the skillet. Add the drained spaghetti and toss everything together to coat the noodles in garlic butter.
  7. Sprinkle mozzarella and Parmesan on top. Cover the skillet with a lid and let the cheese melt for 2-3 minutes.
  8. Season with salt and pepper to taste, toss again gently, and serve hot.

Notes

This dish can be stored in an airtight container in the fridge for 3-4 days. For make-ahead, prep the sausage and garlic in advance. Reheat with a splash of water or olive oil.
