Cooking
- Bring a large pot of salted water to a boil.
- Add the spaghetti and cook until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sausage, crumble it as it cooks, and sauté until browned. Remove and set aside.
- In the same skillet, toss in the butter and minced garlic. Cook for 1 minute until fragrant.
- Add the spinach and sauté until wilted.
- Return the cooked sausage to the skillet. Add the drained spaghetti and toss everything together to coat the noodles in garlic butter.
- Sprinkle mozzarella and Parmesan on top. Cover the skillet with a lid and let the cheese melt for 2-3 minutes.
- Season with salt and pepper to taste, toss again gently, and serve hot.
Notes
This dish can be stored in an airtight container in the fridge for 3-4 days. For make-ahead, prep the sausage and garlic in advance. Reheat with a splash of water or olive oil.
