Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Melt the unsalted butter in a small saucepan over medium heat. Add minced garlic and Italian seasoning, stirring until fragrant (1–2 minutes).
  3. On a large sheet pan, arrange the chicken breasts in the center and place the mixed vegetables around them.
  4. Pour the garlic butter mixture evenly over the chicken and vegetables.
  5. Season with salt and pepper, and top with lemon slices.
Cooking
  1. Bake in the preheated oven for 25-30 minutes until chicken is cooked through (internal temperature of 165°F or 75°C) and vegetables are tender.
