Garlic Balsamic Steak Bites

Ingredients
  

For the Steak
  • 2 lb lean steak (trimmed & cubed into 1-inch pieces) Choose a lean cut for best results.
  • 1 tbsp olive oil Essential for marinating.
  • 2 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • ¼ tsp crushed red pepper (optional) Adjust for heat preference.
  • 3 cloves garlic (minced) For the glaze.
  • 2 tbsp balsamic vinegar (again!) For the glaze.
  • 2 tbsp low-sodium beef broth For the glaze.
  • 1 tsp honey For the glaze.
  • 1 tbsp soy sauce (yes, more!) For the glaze.
For the Vegetables
  • 1.5 lb baby gold potatoes (quartered) Roasted until golden.
  • ½ tbsp olive oil For roasting potatoes.
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • 1 tsp paprika
  • 12 oz fresh green beans (trimmed)
  • ½ tbsp olive oil (because we love it)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder

Method
 

Preparation
  1. In a bowl, combine the steak pieces, olive oil, soy sauce, balsamic vinegar, salt, black pepper, and garlic powder. Let it sit for 30 minutes.
Roasting Veggies
  1. Preheat the oven to 425°F (220°C).
  2. Toss the potatoes with olive oil, salt, black pepper, garlic powder, and paprika. Spread them on a baking sheet and roast for about 25 minutes.
Cooking Steak
  1. In the meantime, heat a skillet over medium-high heat.
  2. Sear the marinated steak bites for 5-7 minutes until they reach your desired doneness.
Making the Glaze
  1. In the same skillet, add minced garlic, balsamic vinegar, beef broth, and honey. Stir until thickened, about 3-5 minutes.
Serving
  1. Serve the steak bites over the roasted potatoes and green beans. Drizzle generously with the balsamic glaze.

Notes

Pro Tip: Don’t skip toasting the garlic in the glaze; it makes all the difference!
