For the yogurt mixture
  • 1 cup plain Greek yogurt (full-fat recommended for creamier texture)
  • 1/2 cup creamy peanut butter (unsweetened, natural preferred)
  • 2 tbsp maple syrup (or honey, adjust to taste)
  • 1/2 tsp vanilla extract (pure)
  • 1/4 cup mini chocolate chips (optional) For extra sweetness
For topping
  • 1 tbsp chopped peanuts For topping
  • 1 tsp flaky sea salt For topping

Method
 

Preparation
  1. In a bowl, combine Greek yogurt, peanut butter, maple syrup, and vanilla extract. Mix until smooth.
  2. Add in the chocolate chips if desired for extra sweetness.
Forming and Freezing
  1. Scoop the mixture onto a parchment-lined baking sheet, forming bite-sized balls.
  2. Freeze for about 1-2 hours or until firm.
Storage
  1. Once frozen solid, transfer the bites to an airtight container for storage.

Notes

These bites can be stored in the freezer for up to 3 months. Let them sit out for a few minutes before serving for best texture.
