  • 2 large eggs
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 stick unsalted butter melted
  • 2 teaspoons coffee extract or 1 tablespoon instant coffee
  • 1 cup granulated sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
Frosting Ingredients
  • 2-4 tablespoons heavy whipping cream
  • 1 1/2 teaspoons instant coffee granules
  • 2 cups powdered sugar
  • 1/3 cup unsalted butter softened

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch baking dish with non-stick spray or parchment paper.
  2. In a microwave-safe bowl, melt the butter. Transfer it to a large mixing bowl.
  3. Add the sugar, eggs, and vanilla extract. Stir until fully blended.
  4. Gradually add the flour, cocoa powder, salt, and baking powder. Stir until the batter is smooth.
  5. Spread the batter evenly into the prepared dish.
  6. Bake for 30-35 minutes, or until a toothpick comes out clean.
  7. Let the brownies cool completely before frosting.
Frosting
  1. Dissolve the instant coffee granules in the heavy whipping cream and set aside.
  2. Beat the unsalted butter until fluffy; mix in the powdered sugar until combined.
  3. Pour in 2 tablespoons of the coffee-infused cream and mix, adjusting the consistency as needed.
  4. Spread the frosting over the cooled brownies, slice, and enjoy!

Notes

For a richer flavor, try different types of cocoa powder. Adding chocolate chips to the brownie batter is a great variation. You can also experiment with nuts or try substituting for vegan options.
