Ingredients
  

Noodle Base
  • 2 cups chow mein noodles Cook according to package instructions.
Vegetables and Protein
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli) Feel free to customize with your favorite veggies.
  • 1 cup protein (chicken, shrimp, or tofu, optional)
Sauces and Seasoning
  • 1 tablespoon vegetable oil For stir-frying.
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce Can be omitted for a vegan option.
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced
  • to taste salt and pepper

Method
 

Preparation
  1. Cook the chow mein noodles according to package instructions. Drain and set aside.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  3. Toss in the mixed vegetables and protein (if using). Stir-fry for about 5-7 minutes until vegetables are tender-crisp.
  4. Add the cooked noodles to the skillet, followed by the soy sauce, oyster sauce, and sesame oil. Toss everything together.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!

Notes

Store leftovers in the fridge for up to 3-4 days or freeze for up to a month. For best results, reheat in a pan or microwave.
